Fifth-generation Sauza Guillermo Erickson has transformed his grandfather's estate—La Fortaleza, also a working museum—into the hottest small-batch distillery in Mexico. Guillermo still uses a tahona (a.k.a. a grinding stone) to macerate the estate-grown agave, after which the stuff is aged in white-oak barrels for 18 months. The result? A tequila that's rich in minerals, with loads of fresh agave—one of the smoothest, sweetest-tasting out there. It even comes in a handblown collector's bottle.
