Spain's greatest wine is also one of the most age-friendly. Vega Sicilia's Unico, made from 80 percent Tempranillo old vines and 20 percent Cabernet Sauvignon, is so intense and concentrated that the winery could easily age it for fifty years before releasing it. Fortunately, you don't have wait that long to taste the Tempranillo's finest expression: The complex 1995, which is the one you're most likely find on menus, features subtle tastes of vanilla, spice, and red fruits—along with an unmistakable whiff of gratitude from those lucky enough to be drinking on your employer's dime.
