Château Pichon-Lalande

Though not technically a "first-growth" vineyard, Pichon-Lalande, in the Haut-Médoc district of Bordeaux, is known as a "super-second"—its wines are nearly as good as the five Bordeaux first growths. The calling cards of the delicious 2000 are velvety texture, aromas of cassis, and a long finish, packed with notes of dense black fruit, cedar, and oak. Do your dinner guests a favor and have the sommelier decant it. This one takes a little while to fully wake up (though you won't have the same problem the next morning, provided you've got the sway with accounting to drink this wine all night).
