Dirty Martin's Kum-Bak Place
When it opened in 1926, Martin's Kum-Bak Place bucked prevailing hamburger trends (not to mention health regulations). While White Castle and its imitators stressed cleanliness and two-bite sliders, Martin's had a filthy floor (yep, that explains the nickname) and wide, juicy patties. Those were cooked on an ultrahot flattop griddle, which gave them a satisfyingly crisp and salty surface—a tradition that continues today. Like Martin's founders, the current owners use only fresh beef and ensure there's at least 20 percent fat for a moist burger. Located near the University of Texas's campus, Martin's provides local students with their idea of the three major food groups (meat, cheese, and bread) via the DH Special—basically a grilled-cheese sandwich and burger combined, served on thick slices of Texas toast.
