Dyer's Burgers
Regular burgers not greasy enough for you? Consider Memphis legend Dyer's. They pound ground beef on a marble countertop till it's nearly paper-thin, peel it off the surface with a spatula, then dunk it into a large cast-iron skillet of bubbling grease. Yes, it's a deep-fried burger. The results: a tasty patty with a crisp, crunchy exterior and a moist, juicy core (well, all five millimeters of it). The owners boast that they've used the same grease since 1912, though you'll be (somewhat) pleased to learn the oil is strained nightly to remove solids (and augmented when needed). A single Dyer's burger is pretty small, so do the local thing and order a double-double—two patties and two slices of cheese. If you really want to keep your cardiologist busy, try a "dip," where the cooked burger is assembled and deep-fried again, bun and all. Not so strange in the land of Elvis.
