Simultaneously nutty and elegant—much like countrywoman Björk—this Icelandic brand is a purist's dream. Its base glacial water is naturally 100-percent free of impurities, while the spirit itself is distilled in a western village where the air's so clean, CO2 levels are actually falling. The distillation process is powered by eco-friendly geothermal heat from Iceland's underlying volcanoes and uses an old-fashioned Carter Head still. Production is limited to around 200 cases per batch, so grab a bottle when you see one (and make sure you say it right—RAY-kuh—when doing so).
